Description

This Tuna Pasta Salad with Creamy Lemon Dressing brings together the delicious taste of albacore tuna, ditalini pasta, and a zesty dressing. Ingredients

  • 2 cups ditalini pasta
  • 1 cup frozen peas
  • 2 5 oz cans of albacore tuna (drained well)
  • 1/4 cup parmesan cheese
  • 1/2 cup celery (diced)
  • fresh dill (optional, to garnish)
  • 1/2 cup greek yogurt
  • 1/2 cup mayonnaise
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1/2 tsp granulated garlic
  • 1/4 tsp salt
  • 1/2 tsp pepper


Instructions

  1. Boil 2 cups of dry ditalini pasta according to the package directions.
  2. When the pasta is fully cooked, add the frozen peas and allow to sit for 30 seconds before draining.
  3. Rinse the pasta and pea mixture under cool water until fully cool, then shake off excess moisture.
  4. In a small bowl, mix the ingredients for the creamy lemon dressing and set aside.
  5. In a large mixing bowl, combine the cooled pasta and pea mixture, drained tuna, diced celery, and parmesan cheese.
  6. Add the creamy lemon dressing to the mixture and toss to combine.
  7. Garnish with additional parmesan and fresh dill if desired. Store in the refrigerator, serve, and enjoy.

Notes

For extra flavor, let the salad sit for at least 30 minutes in the refrigerator before serving.
