- 3 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup light brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, melted
- 1 large egg
- 2 teaspoons vanilla extract
- 4 cups fresh strawberries, diced small
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 3 tablespoons cornstarch
- 2 tablespoons water
Instructions
- In a saucepan over medium heat, combine strawberries, sugar, and lemon juice. Cook for 8 to 10 minutes, stirring occasionally, until the strawberries soften.
- In a small bowl, mix cornstarch and water together. Add this mixture to the strawberries and cook for another 2 to 3 minutes until thickened. Remove from heat and allow the filling to cool completely.
- Preheat the oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper.
- In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt.
- Pour in the melted butter, add the egg, and vanilla extract. Mix well until a soft, crumbly dough forms.
- Press about two-thirds of the crumbled dough into the bottom of the prepared baking dish.
- Spread the cooled strawberry mixture evenly over this layer.
- Pinch the remaining dough into small chunks and scatter it over the strawberry filling to create a crumble topping.
- Bake in the preheated oven for 40 to 45 minutes until the top is golden and the edges appear set.
- Allow to cool at room temperature and then refrigerate for 1 to 2 hours before slicing into bars.
Notes
For best results, use fresh strawberries for optimal flavor.
These bars can be served warm or chilled, and pair well with whipped cream.
