Description

This Pesto Chicken Bruschetta Bake is a delightful dish that combines juicy chicken breasts topped with a burst of flavors from pesto, fresh tomatoes, and mozzarella. It’s easy to prepare and ideal for a quick dinner that satisfies the whole family.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/3 cup pesto
  • 4 thick slices mozzarella cheese
  • drizzle of olive oil
  • 3 roma tomatoes, diced
  • 1/4 cup fresh basil leaves, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • red pepper flakes
  • extra fresh basil for garnish


Instructions

  1. In a medium bowl, mix together the diced tomatoes, chopped basil, minced garlic, balsamic vinegar, and olive oil. Set aside for flavors to meld.
  2. Preheat your oven and take out a large 9×13 baking dish.
  3. Arrange chicken breasts in the baking dish in a single layer, lightly pounding if they are very thick.
  4. Season both sides of the chicken with garlic powder, sea salt, black pepper, dried basil, and dried oregano.
  5. Spread pesto evenly over the chicken breasts.
  6. Top the pesto-covered chicken with the bruschetta mixture.
  7. Place a thick slice of mozzarella cheese on each breast.
  8. Drizzle lightly with olive oil.
  9. Bake for 35 minutes until the chicken is cooked through (internal temperature of 165°F). Broil for 1-2 minutes for a golden cheese top, watching closely.
  10. Sprinkle with red pepper flakes if desired and serve over pasta, rice, roasted vegetables, or with crusty bread.

Notes

For extra flavor, use homemade pesto if possible.
Serve immediately for the best taste and texture.
Can be paired with a side salad for a complete meal.
