Description

Savor the delightful flavors of Pasta with Peas. This simple dish combines crispy bacon, vibrant green peas, and creamy parmesan, making it an ideal choice for a quick dinner or a comforting meal everyone will love.


Ingredients

  • 4 slices thick-cut bacon, diced
  • 1 medium yellow onion, diced
  • 1/2 tsp kosher salt
  • 1/4 tsp red pepper flakes
  • 1 lb green peas
  • 12 oz short pasta
  • 2 oz parmesan cheese, finely grated


Instructions

  1. In a Dutch oven or deep skillet over medium heat, cook the bacon until crisp. Set aside on a paper towel-lined plate, reserving the rendered fat in the pot.
  2. Add the diced onion, kosher salt, and red pepper flakes to the pot. Sauté for a few minutes until the onions become translucent. Stir in the peas and cook for an additional 5 minutes.
  3. Pour half of the peas into a blender or use an immersion blender for a smoother texture. Place the remaining peas in a bowl and set aside.
  4. Fill the pot with 4 cups of hot water and a pinch of salt. Bring it to a boil over high heat and add the pasta, cooking according to package directions.
  5. Once the pasta is nearly done, reserve one cup of the pasta cooking water, then drain the pasta. Return the pasta to the pot, add the pea puree, the reserved peas, and the grated parmesan. Stir well, adding more pasta water if necessary to achieve a creamy sauce.
  6. Simmer for 1-2 minutes while stirring to finish the cooking. Adjust seasoning to taste. Serve immediately, topped with crumbled bacon and additional parmesan cheese.

Notes

For a vegetarian version, you can omit the bacon.
Feel free to adjust the amount of red pepper flakes based on your spice preference.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
