No-Bake Key Lime Pie Bars offer a burst of refreshing lime flavor with a creamy texture. Simple to whip up and perfect for gatherings or a sweet treat at home, these bars are made with wholesome ingredients like cashews and maple syrup. Enjoy this delightful dessert without turning on the oven!


Ingredients

  • 2 cups graham cracker crumbs (gluten-free if needed)
  • ½ cup unsalted vegan butter, melted
  • 2 cups raw cashews
  • 1 cup nature’s charm evaporated coconut milk (or coconut cream)
  • ½ cup maple syrup
  • ¼ cup melted coconut oil
  • ⅓ cup lime juice
  • 1 tbsp lime zest
  • 1 tsp vanilla extract
  • ⅛ tsp salt


Instructions

  1. Line an 8×8-inch baking dish with parchment paper, allowing some paper to hang over the edges for easy removal.
  2. In a bowl, combine the graham cracker crumbs and melted vegan butter. Mix well, then press the mixture firmly into the bottom of the prepared baking dish.
  3. In a blender, combine the raw cashews, evaporated coconut milk (or coconut cream), maple syrup, melted coconut oil, lime juice, lime zest, vanilla extract, and salt. Blend until smooth and creamy.
  4. Pour the blended mixture over the graham cracker crust in the baking dish.
  5. Freeze the bars for about 4 hours or overnight. Once set, remove from the freezer and allow to thaw for 5-10 minutes before slicing into bars.

Notes

For a more intense lime flavor, consider adding more lime zest.
These bars can be stored in the freezer for a longer shelf life. Just let them thaw slightly before serving.
