- 2 cups graham cracker crumbs (gluten-free if needed)
- ½ cup unsalted vegan butter, melted
- 2 cups raw cashews
- 1 cup nature’s charm evaporated coconut milk (or coconut cream)
- ½ cup maple syrup
- ¼ cup melted coconut oil
- ⅓ cup lime juice
- 1 tbsp lime zest
- 1 tsp vanilla extract
- ⅛ tsp salt
Instructions
- Line an 8×8-inch baking dish with parchment paper, allowing some paper to hang over the edges for easy removal.
- In a bowl, combine the graham cracker crumbs and melted vegan butter. Mix well, then press the mixture firmly into the bottom of the prepared baking dish.
- In a blender, combine the raw cashews, evaporated coconut milk (or coconut cream), maple syrup, melted coconut oil, lime juice, lime zest, vanilla extract, and salt. Blend until smooth and creamy.
- Pour the blended mixture over the graham cracker crust in the baking dish.
- Freeze the bars for about 4 hours or overnight. Once set, remove from the freezer and allow to thaw for 5-10 minutes before slicing into bars.
Notes
For a more intense lime flavor, consider adding more lime zest.
These bars can be stored in the freezer for a longer shelf life. Just let them thaw slightly before serving.
