Description

These Grilled Shrimp Skewers are a quickly prepared dish bursting with flavor. With lemon juice, garlic, and a hint of cayenne, they make for a delightful dinner that’s perfect for any occasion.


Ingredients

  • ¼ cup extra-virgin olive oil
  • ¼ cup fresh lemon juice, ~2 large lemons
  • 4 cloves garlic, minced
  • 3 tablespoons honey
  • 1 teaspoon kosher salt
  • ½ teaspoon cayenne pepper, adjust to taste
  • 1 teaspoon paprika
  • 2 pounds jumbo shrimp, peeled and deveined
  • lemon wedges, for serving


Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a large bowl, mix together the olive oil, lemon juice, minced garlic, honey, kosher salt, cayenne pepper, and paprika. Set aside ¼ cup of the marinade for brushing while grilling.
  3. Devein the shrimp if needed. Pat them dry, then add to the marinade, tossing gently to coat. Cover and refrigerate for 15 minutes to 1 hour.
  4. Preheat a grill or grill pan to medium-high heat, lightly greasing it with oil.
  5. Remove the shrimp from the marinade and thread them onto skewers, making sure to go through both the tail and thick part.
  6. Grill the skewers for 2 minutes, then flip and grill for another 2 minutes.
  7. Brush the tops with reserved marinade, flip the skewers again and brush the other side. Cook for 1 minute before flipping and brushing again, cooking for an additional minute until the shrimp are opaque and lightly charred.
  8. Remove from the grill immediately and serve with lemon wedges.

Notes

For extra flavor, let the shrimp marinate for the full hour if possible.
Adjust the cayenne pepper according to your heat preference.
Serve these skewers with a side salad or over rice for a complete meal.
