Description

This Green Goddess Caesar Salad with Chicken is a delightful blend of fresh greens, creamy dressing, and tender chicken. With its zesty lemon and herb flavors, it’s perfect for a quick dinner or a healthy lunch. Enjoy a homemade taste that’s simple to prepare and satisfying to eat!


Ingredients

  • ⅓ cup grated + 2 tablespoons thinly sliced parmigiano reggiano
  • ¼ cup fresh lemon juice
  • 1 small garlic clove
  • ½ tbsp dijon mustard
  • 2 anchovy fillets
  • 1 tbsp extra virgin olive oil
  • 5 tbsp fat-free greek yogurt
  • ⅓ cup parsley, plus a few extra leaves for finishing
  • ⅓ cup basil, plus a few extra leaves for finishing
  • ¼ cup dill, plus a few extra leaves for finishing
  • 4 cups romaine lettuce, chopped
  • 2 cups cooked rotisserie chicken breast, pulled into bite-size chunks
  • ½ cup cucumber, sliced into coins
  • ¼ cup watermelon radish, thinly sliced
  • black pepper


Instructions

  1. In a food processor, combine the cheese, lemon juice, garlic clove, dijon mustard, and anchovies. Blend for 15 to 20 seconds.
  2. Add the extra virgin olive oil, greek yogurt, parsley, dill, and basil. Blend again for another 15 to 30 seconds until smooth. Set aside.
  3. Layer the chopped romaine lettuce as the base in a salad bowl.
  4. Add the pulled rotisserie chicken, cucumber slices, and radish on top.
  5. Drizzle the prepared green goddess Caesar dressing over the salad.
  6. Finish with additional herbs, slices of parmigiano reggiano, and freshly cracked black pepper to taste.

Notes

Feel free to customize the salad with your favorite vegetables.
The dressing can be made in advance and stored in the refrigerator for up to 3 days.
For added crunch, consider topping with toasted nuts or seeds.
