- 1 lb ground pork or ground chicken
- 3 green onions, chopped (use the whites and the green)
- 2 tbsp low sodium soy sauce
- 1 tbsp brown sugar
- ⅓ bunch fresh cilantro, chopped (more for topping)
- 3 cloves garlic, minced
- 1 inch fresh ginger, minced
- 2 tsp red pepper flakes
- 10-12 street taco size flour tortillas
- matchstick carrots
- cucumber, diced
- salted peanuts, chopped
- fresh cilantro
- ponzu or soy sauce for dipping (optional)
Instructions
- In a large bowl, combine the ground pork, ginger, garlic, red pepper flakes, brown sugar, soy sauce, green onions, and chopped cilantro. Mix well and set aside.
- Heat a large non-stick skillet over medium heat. Scoop about 1/4 cup of the pork mixture and place it in the center of a flour tortilla. Cook 2-3 tacos at a time, pork side down, pressing them down with a spatula for 30-60 seconds.
- Allow the tacos to cook for 3 minutes, then gently flip them. Cover with a lid and cook for an additional 2-3 minutes to steam the tortillas until soft.
- Continue to cook in batches, placing the finished dumplings on a baking sheet. Add toppings and serve warm for dipping in soy or ponzu sauce.
Notes
Feel free to replace ground pork with ground chicken for a lighter option.
For added freshness, include other toppings such as avocados or radishes.
