Description

These Double Chocolate Potato Chip Cookies are utterly delightful with their rich chocolate flavor and crispy potato chip crunch. Perfect for satisfying a sweet tooth with a homemade treat, they are easy to make and sure to impress at any gathering.


Ingredients

  • 1 cup butter, room temperature (2 sticks)
  • 2 cups granulated sugar
  • 1 teaspoon vanilla
  • 2 large eggs
  • 2¼ cups all purpose flour
  • ¾ cup cocoa
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1½ cups chocolate chips
  • 1 cup crushed plain ripple chips


Instructions

  1. In a mixing bowl, beat the butter and sugar with an electric mixer on medium-high speed for 2-3 minutes until fluffy.
  2. Add the eggs and vanilla, then beat until well combined.
  3. Lower the mixer speed and add the flour, cocoa, baking soda, and salt, mixing until just combined.
  4. Using a spatula or wooden spoon, stir in the chocolate chips and crushed ripple chips.
  5. Preheat the oven to 350℉ and line 3 or 4 baking sheets with parchment paper.
  6. Roll the dough into balls about 1-2 inches in diameter, optionally dipping them in crushed chips before placing them on the baking sheets.
  7. Bake in the preheated oven for 8-10 minutes, until the cookies are set. They may appear slightly glossy in the center.
  8. If desired, sprinkle additional chocolate chips on top while they are still hot.
  9. Allow cookies to cool for at least 15 minutes before transferring them from the baking sheets.

Notes

For extra flavor, try adding a pinch of sea salt on top before baking.
Cookies can be stored in an airtight container for several days.
Feel free to adjust the amount of chocolate chips based on your preference.
