Ingredients

  • 1 cup cottage cheese 4% small curd
  • 1 large egg
  • 1 ½ cups all-purpose flour
  • 2 ¼ teaspoons baking powder
  • ½ teaspoon kosher salt
  • 1 egg white
  • 1 teaspoon water
  • 1 tablespoon everything bagel seasoning


Instructions

  1. Preheat the oven to 375˚F.
  2. Process the cottage cheese in a mini food processor until smooth, then let it rest for 10 minutes.
  3. Add one large egg to the blended cottage cheese and blend until light and fluffy.
  4. In a bowl, combine the flour, baking powder, and salt. Add the cottage cheese mixture and mix until a rough dough forms.
  5. Transfer the dough to a floured surface, shape it into a ball, and divide into 6 pieces.
  6. Roll each piece into a long rope, form it into a ring, pinch the ends together, and place on a parchment-lined baking sheet.
  7. Beat the egg white with one teaspoon of water and brush it over the bagels. Sprinkle with everything bagel seasoning or your choice of toppings.
  8. Bake in the preheated oven for 18-22 minutes until golden brown.
