- 1 yellow pepper, cored, seeded, and sliced thin
- 15 ounces mandarin oranges, drained
- ¼ cup sliced almonds
- ¼ cup pickled red onions
- ¼ cup chopped green onions
- 2 tablespoons freshly chopped parsley
- 1 instant ramen packet (flavor packet discarded)
- 3 tablespoons rice wine vinegar
- 2 tablespoons honey
- 2 tablespoons low sodium soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon freshly minced ginger
- 1 clove minced garlic
- ¼ teaspoon chili paste (or red pepper flakes, to taste)
- ¼ cup olive oil
Instructions
- In a large bowl, combine the coleslaw mix with shredded rotisserie chicken, sliced yellow pepper, mandarin oranges, sliced almonds, pickled red onions, green onions, and chopped parsley.
- Gently crush the instant ramen noodles and sprinkle them over the mixture in the bowl.
- In a small bowl, whisk together the rice wine vinegar, honey, low sodium soy sauce, sesame oil, minced ginger, minced garlic, chili paste, and olive oil until smooth.
- Pour the dressing over the salad and gently toss everything together to combine.
Notes
Feel free to adjust the spice level by adding more or less chili paste.
This salad can be made a few hours in advance; just keep the dressing separate until serving.
Substituting different proteins like grilled chicken or tofu also works well.
