- 4 lbs chicken thighs sliced thinly
- 1.5 lbs bacon sliced
- 1/2 cup cowboy butter rub
- buffalo sauce as needed
- 2.5 tbsp sour cream
- 2 tbsp mayonnaise
- 1.5 tbsp chopped parsley
- 1 tbsp chopped dill
- 1.5 tsp garlic powder
- 1 tsp black pepper
- buttermilk to desired consistency
- Salt to taste
Instructions
- Pound the chicken thighs until they are about ⅛” thick.
- Create a base layer of chicken approximately 2.5 feet long and 1 foot wide. Add a layer of bacon over this, then more chicken on top. Wrap everything in foil and place in the freezer for at least 1 hour, or preferably 2-3 hours.
- Preheat your grill to medium heat (about 325F).
- Remove the meat from the freezer and cut it into 2×2” cubes. Skewer these onto small skewers, seasoning the outside with the Cowboy Butter Rub.
- Place the skewers on the grill, cooking slowly to allow the fat to render and the bacon to crisp. Grill for about 15-20 minutes or until the internal temperature reaches 165F, basting with buffalo sauce throughout the cooking process. Once done, remove from the grill and let rest.
- In a bowl, combine your ingredients to make homemade ranch dressing.
- Serve the skewers with the ranch dressing on the side. Enjoy!

For a spicier kick, adjust the amount of buffalo sauce used during cooking.
