Description

This Chia Seed Parfait is a delightful blend of juicy berries and creamy yogurt, layered to perfection. With minimal prep time and a few key ingredients, it’s a quick, healthy option for breakfast or a satisfying dessert.


Ingredients

Scale
  • 2 cups berries or cherries, fresh or frozen
  • 1 tablespoon chia seeds
  • ½ lemon, juiced (approximately 1 tablespoon, strain out any seeds)
  • 1 tablespoon honey or sweetener of choice (use more or less as desired)
  • ½ cup yogurt (plain Greek yogurt recommended)
  • ⅛ cup granola (or use muesli or cereal of choice)
  • Extra honey (optional, use as desired)


Instructions

  1. Add the fruit to a small saucepan. Heat over medium until the fruit starts releasing its juices.
  2. Mash the fruit with the back of a wooden spoon to help it break down. Once the mixture is very juicy and boiling, remove from heat.
  3. Mix in the chia seeds and lemon juice, stirring well.
  4. Let the compote cool for about 10 minutes. It will thicken as it cools. Taste and adjust sweetness with honey if needed.
  5. The chia seed fruit compote can be refrigerated for up to a week or frozen for up to 3 months.

Notes

Feel free to vary the fruit based on seasonal availability.
For added flavor, consider adding vanilla extract to the yogurt.
