This Chia Seed Parfait is a delightful blend of juicy berries and creamy yogurt, layered to perfection. With minimal prep time and a few key ingredients, it’s a quick, healthy option for breakfast or a satisfying dessert.
Ingredients
Scale
- 2 cups berries or cherries, fresh or frozen
- 1 tablespoon chia seeds
- ½ lemon, juiced (approximately 1 tablespoon, strain out any seeds)
- 1 tablespoon honey or sweetener of choice (use more or less as desired)
- ½ cup yogurt (plain Greek yogurt recommended)
- ⅛ cup granola (or use muesli or cereal of choice)
- Extra honey (optional, use as desired)
Instructions
- Add the fruit to a small saucepan. Heat over medium until the fruit starts releasing its juices.
- Mash the fruit with the back of a wooden spoon to help it break down. Once the mixture is very juicy and boiling, remove from heat.
- Mix in the chia seeds and lemon juice, stirring well.
- Let the compote cool for about 10 minutes. It will thicken as it cools. Taste and adjust sweetness with honey if needed.
- The chia seed fruit compote can be refrigerated for up to a week or frozen for up to 3 months.
Notes
Feel free to vary the fruit based on seasonal availability.
For added flavor, consider adding vanilla extract to the yogurt.
