  • ½ cup unsalted butter, softened
  • 1 ¼ cup granulated sugar, divided
  • 1 large egg
  • ¾ teaspoon vanilla extract
  • ¾ teaspoon almond extract
  • 1 cup greek yogurt
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • ¾ teaspoon table salt
  • 2 cups fresh blueberries


Instructions

  1. Preheat your oven to 350°F and spray an 8×8 baking dish with nonstick spray.
  2. In a large bowl, beat the butter and 1 cup of sugar until light and creamy. Mix in the egg, vanilla extract, almond extract, and yogurt until smooth.
  3. Gradually add in the flour, baking powder, and salt, mixing until incorporated.
