Description

This Beginner-Friendly Shakshuka with Marinara Sauce is full of flavor and easy to prepare. With fresh veggies, poached eggs, and creamy cheese, it’s perfect for a quick dinner or a healthy meal. Serve it with warm naan or pita for a comforting touch.


Ingredients

  • 1 to 2 tbsp olive oil
  • 1 medium yellow onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp sweet or smoked paprika
  • 1/4 tsp cayenne pepper, or to taste
  • 1 cup halved cherry tomatoes
  • 2 cups marinara sauce, jarred or pre-made
  • 2-3 cups fresh baby spinach
  • 4 large eggs
  • 1/2 cup feta or goat cheese
  • 1/4 cup chopped parsley, for garnish
  • 4-6 pieces naan or pita bread


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the onions and bell peppers for the veggies.
  3. Heat olive oil in a cast iron skillet over medium to medium-high heat.
  4. Add onions and bell peppers; sauté for about 10 to 15 minutes until onions start to caramelize.
  5. Incorporate minced garlic and cook for one more minute until fragrant.
  6. Mix in ground cumin, paprika, and cayenne to coat the mixture.
  7. Add halved cherry tomatoes and marinara sauce, stirring to combine.
  8. Heat the sauce through, then mix in fresh spinach and cook until wilted (about 3–4 minutes).
  9. Remove from heat and make four small indentations in the sauce, then carefully crack an egg into each.
  10. Sprinkle half of the feta or goat cheese over the top.
  11. Bake in the preheated oven for 8-10 minutes or until the egg whites are set.
  12. Garnish with remaining cheese and chopped parsley; serve with naan or pita.

Notes

For extra flavor, consider adding spices or herbs to the marinara sauce.
If you prefer a lower calorie option, reduce the amount of cheese or use a lighter cheese.
