- 2 cups day-old cooked white rice cold from the fridge
- 2 tablespoons avocado oil or any neutral flavored oil
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 3 cloves garlic minced
- 1 teaspoon ginger freshly minced
- 1/4 teaspoon pepper
- 1/2 cup frozen peas and carrots
- 2 large eggs
- 1 teaspoon sesame oil
Instructions
- In a large bowl, mix the avocado oil, soy sauce, oyster sauce, minced garlic, minced ginger, and pepper. Add the cold rice, tossing well to ensure all grains are evenly coated.
- Spread the seasoned rice onto an air fryer liner in the air fryer basket. Air fry at 400°F for 8 minutes without stirring.
- After 8 minutes, add the frozen peas and carrots to the rice, tossing everything together and scraping any crispy bits from the bottom. Return to an even layer and air fry for another 4 minutes.
- Next, create a small well in the center of the rice and crack the eggs into this well. Air fry for 3 minutes, until the egg whites are set.
- Stir in the eggs, drizzle with sesame oil, and combine everything thoroughly.
- Serve the fried rice hot, garnished with scallions.
Notes
Using day-old rice gives the best texture, preventing the fried rice from becoming mushy.
Feel free to add other vegetables or proteins based on your preferences.
