- 12 oz pasta rotini or bowtie
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, chopped
- 1/2 cup shredded carrots
- 1/3 cup red onion, finely chopped
- 1 cup mozzarella cheese, cubes or mini mozzarella balls
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp dijon mustard
- 1 tbsp lemon juice
- 1 tsp garlic powder
- salt and black pepper to taste
- fresh parsley for garnish (optional)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
- In a large bowl, combine the pasta, tomatoes, cucumber, bell pepper, carrots, and red onion.
- Add mozzarella cheese and gently toss to combine.
- In a small bowl, whisk together mayonnaise, sour cream, mustard, lemon juice, garlic powder, salt, and pepper.
- Pour the dressing over the salad and mix until it's well coated.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
- Stir the salad, garnish with parsley if desired, and serve chilled.
