Description

This vibrant 4th of July Pasta Salad is a must for summer gatherings! Bursting with flavor from fresh vegetables and creamy dressing, it’s easy to prepare and perfect for any occasion. Enjoy a delightful, homemade dish that everyone will love.


Ingredients

  • 12 oz pasta rotini or bowtie
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, chopped
  • 1/2 cup shredded carrots
  • 1/3 cup red onion, finely chopped
  • 1 cup mozzarella cheese, cubes or mini mozzarella balls
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • salt and black pepper to taste
  • fresh parsley for garnish (optional)


Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large bowl, combine the pasta, tomatoes, cucumber, bell pepper, carrots, and red onion.
  3. Add mozzarella cheese and gently toss to combine.
  4. In a small bowl, whisk together mayonnaise, sour cream, mustard, lemon juice, garlic powder, salt, and pepper.
  5. Pour the dressing over the salad and mix until it's well coated.
  6. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
  7. Stir the salad, garnish with parsley if desired, and serve chilled.
