Description

Watergate Salad is an irresistible combination of crushed pineapple, pistachio pudding, and whipped topping that creates a deliciously creamy side dish. Perfect for gatherings, its simple prep makes it an ideal treat for any occasion!


Ingredients

  • 1 (20 ounce) can crushed pineapple with juices
  • 2 (3.4 ounce) boxes pistachio instant pudding mix
  • 1 cup mini marshmallows
  • 1/2 cup chopped pistachios, pecans, or walnuts + more for garnish
  • 1/2 cup halved maraschino cherries + whole ones for garnish
  • 8 ounces whipped topping (i use cool whip) thawed until it's easily spreadable


Instructions

  1. In a large bowl, combine the crushed pineapple with the instant pudding mixes until well mixed.
  2. Add the marshmallows, nuts, and maraschino cherries, stirring gently.
  3. Fold in the whipped topping until fully incorporated, then refrigerate for at least one hour.
  4. Before serving, garnish with whole maraschino cherries and additional nuts, and enjoy!

Notes

For a nut-free version, simply omit the nuts.
This salad can be made a day in advance for convenience.
Feel free to experiment with other fruits like mandarin oranges or strawberries.
