- 1 (20 ounce) can crushed pineapple with juices
- 2 (3.4 ounce) boxes pistachio instant pudding mix
- 1 cup mini marshmallows
- 1/2 cup chopped pistachios, pecans, or walnuts + more for garnish
- 1/2 cup halved maraschino cherries + whole ones for garnish
- 8 ounces whipped topping (i use cool whip) thawed until it's easily spreadable
Instructions
- In a large bowl, combine the crushed pineapple with the instant pudding mixes until well mixed.
- Add the marshmallows, nuts, and maraschino cherries, stirring gently.
- Fold in the whipped topping until fully incorporated, then refrigerate for at least one hour.
- Before serving, garnish with whole maraschino cherries and additional nuts, and enjoy!
Notes
For a nut-free version, simply omit the nuts.
This salad can be made a day in advance for convenience.
Feel free to experiment with other fruits like mandarin oranges or strawberries.
