- 3 large eggs
- 1/2 cup of sweetened flaked coconut
- 1/2 cup of toasted pecans
- 1 1/2 cups milk
- 1 3.4 ounce packet of instant pistachio pudding
- 8-ounce cool whip thawed
- 1/2 cup of sweetened flaked coconut
- 1/2 cup of toasted chopped pecans
Instructions
- Preheat the oven to 350 degrees F.
- In a large mixing bowl, combine the cake mix, vegetable oil, pudding mix, eggs, and 7-Up. Mix on medium speed until well blended.
- Gently fold in the toasted pecans and coconut into the batter.
- Divide the mixture evenly between two greased 9-inch cake pans.
- Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool completely before frosting.
