Description

Taco Pasta is a one-pot wonder packed with flavors, featuring ground beef, tender pasta, and melted cheese—perfect for a quick dinner the whole family will love!


Ingredients

  • 1 tbsp olive oil
  • 1 yellow onion (diced)
  • 2 garlic cloves (minced)
  • ½ lb. ground beef
  • 1 packet taco seasoning (about 1 oz.)
  • 15 oz. can diced tomatoes (with juices)
  • 4 oz. can diced green chiles (with juices)
  • ½ lb. small pasta shells (uncooked)
  • 2 cups beef broth
  • 1 cup cheddar cheese (shredded)
  • 2 green onions (sliced)


Instructions

  1. Dice the onion and mince the garlic. Heat olive oil in a deep skillet or pot over medium heat, then sauté the onion and garlic until soft.
  2. Add the ground beef and taco seasoning, cooking until the beef is browned and cooked through.
  3. Stir in the diced tomatoes and diced green chiles, mixing well with the beef mixture.
  4. Add the uncooked pasta and beef broth, stirring to combine. It's fine if the pasta isn't completely submerged.
  5. Cover the pot and increase the heat to medium-high to bring the broth to a full boil. Stir the pasta once boiling, replace the lid, and lower the heat to medium-low.
  6. Allow the pasta to simmer for about 10 minutes, stirring occasionally and keeping the lid on until the pasta is tender. The sauce should be thick and flavorful.
  7. Stir in the shredded cheddar cheese until melted, then top with sliced green onions before serving.

Notes

For added heat, you can include jalapeños or hot sauce according to taste.
Feel free to swap out ground beef for turkey or chicken for a leaner option.
This dish can be easily customized with favorite toppings such as sour cream or avocado.
