This Spaghetti Salad is a delightful blend of flavors, featuring tender spaghetti, savory pepperoni, and crisp vegetables. Ideal for a quick meal or a potluck, it’s easy to prepare and always a hit!

- 1 lb. spaghetti
- 16 oz. bottle italian dressing
- 8 oz. cheddar cheese cut into small cubes
- 6 oz. pepperoni sliced into strips
- 10 oz. package of grape or cherry tomatoes halved
- 1 english cucumber chopped
- 1 green bell pepper chopped
- ½ red onion thinly sliced
- 2 tbsp chopped parsley plus more for garnish if desired
- parmesan optional for serving
Instructions
- Cook the spaghetti according to the package directions. Drain and rinse with cold water to cool. Place in a large bowl.
- To the spaghetti, add the Italian dressing, cheese, pepperoni, tomatoes, cucumber, bell pepper, red onion, and parsley.
- Toss until well combined. Refrigerate for at least one hour before serving.
- Serve the spaghetti salad topped with Parmesan and extra chopped parsley if desired.
Notes
Feel free to add more vegetables like olives or spinach for added flavor.
This salad can be made a day ahead for improved taste; just keep it refrigerated.
