Description

These Smashed Potatoes are a delightful side dish featuring crispy edges and a fluffy interior. Made with baby yellow potatoes, garlic, and aromatic seasonings, they are simple to prepare and perfect for any meal.


Ingredients

  • 24 ounces of baby yellow potatoes washed
  • Water
  • 1 ½ teaspoons of salt divided
  • ¼ cup of olive oil plus more for drizzling
  • 1 teaspoon of garlic powder
  • ¼ teaspoon of salt
  • ½ teaspoon of black pepper
  • 1 teaspoon of italian seasoning (optional)
  • ½ teaspoon of smoked paprika (optional)


Instructions

  1. Place the potatoes in a large pot, covering them with water. Add 1 teaspoon of salt and bring to a boil.
  2. After boiling for 5 minutes, test one potato for tenderness using a fork. If it's tender, drain and let them cool slightly while the oven heats up.
  3. Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone mat.
  4. Pour ¼ cup of olive oil onto the baking sheet, spreading it evenly. Add the cooked potatoes to the sheet.
  5. Using the bottom of a mug or glass, press each potato down until it’s about ¼ to ½ inch thick, ensuring space between them.
  6. Sprinkle the potatoes with the remaining ½ teaspoon of salt, garlic powder, black pepper, and if desired, Italian seasoning and smoked paprika. Drizzle extra olive oil on top.
  7. Roast the potatoes for 30 minutes, checking at the 15-minute mark. Continue cooking until they are golden and crispy around the edges.
  8. Once done, remove from the oven and season with additional salt and pepper if desired.
  9. Serve hot and enjoy!

Notes

Adjust seasonings according to personal preference.
