Description

This Slow Cooker Chicken Marsala is a delightful dish featuring tender chicken cutlets enveloped in rich marsala wine sauce, complemented by earthy mushrooms. With simple preparation and minimal cook time, it’s perfect for busy evenings or cozy weekends enjoyed with family and friends.


Ingredients

  • 1 ½ pounds chicken breasts cut lengthwise to make cutlets
  • 1 cup marsala cooking wine
  • ½ cup chicken broth
  • 2 cloves garlic minced
  • 8 oz bella mushrooms sliced
  • 2 tablespoon cornstarch
  • parsley to garnish, fresh


Instructions

  1. Season the chicken cutlets with salt, pepper, and minced garlic.
  2. Pour the Marsala wine and chicken broth into the slow cooker, then add the seasoned chicken.
  3. Layer the sliced mushrooms on top of the chicken.
  4. Set the slow cooker to low and cook for 3 hours until the chicken is tender and flavor-infused with mushrooms.
  5. Carefully remove the chicken and mushrooms, keeping them warm by tenting with foil.
  6. In a small bowl, mix cornstarch with a bit of water, then stir into the Marsala liquid in the crockpot.
  7. Switch the crockpot to high, remove the lid, and let the sauce thicken for 5-10 minutes.
  8. Return the chicken and mushrooms to the sauce, cover, and allow to mingle for a minute before serving.
  9. Serve with creamy mashed potatoes, pasta, or your favorite side, garnished with fresh parsley.
