Ingredients

Scale
  • 400 g plain skyr
  • 2 espresso shots, divided
  • Water, optional (to dilute espresso for soaking)
  • 1 teaspoon vanilla extract
  • 1 scoop chocolate protein powder
  • 8 ladyfingers
  • cocoa powder, for dusting
  • melted chocolate, optional, for drizzling


Instructions

  1. Brew 2 shots of espresso. Use 1 for soaking ladyfingers and 1 for the skyr cream. Dilute with water if the espresso is too strong.
  2. In a bowl, combine skyr, 1 shot of espresso, vanilla extract, and chocolate protein powder. Mix until smooth.
  3. Quickly dip each ladyfinger into the espresso. Do not oversoak them.
  4. Lay half of the soaked ladyfingers in a small glass dish or container.
  5. Spread half of the skyr cream evenly over this layer of ladyfingers.
  6. Add the remaining ladyfingers on top, followed by spreading the rest of the cream evenly over them. Smooth the surface.
  7. Cover the dish and refrigerate for at least 4 hours. This allows it to set properly and the skyr to release some liquid, which is normal.
  8. Before serving, dust the top with cocoa powder and add melted chocolate if desired.

Notes

Adjust the sweetness by adding more chocolate protein powder to the cream if desired.
For an extra flavor punch, consider adding a pinch of cinnamon to the skyr mixture.
