Description

Ingredients

  • 3 tbsp extra-virgin olive oil
  • 1 orange 1/4 cup fresh orange juice
  • 1 tbsp white miso paste
  • 1 tbsp rice vinegar
  • 2 tsp fresh ginger grated
  • 1 clove garlic minced
  • 1 tsp honey
  • 1/2 tsp red pepper flakes
  • 1 1/4 lbs large carrots or rainbow variety
  • 1 cup cilantro coarsely chopped
  • 1/4 cup fresh mint leaves chopped
  • 4 oz pomegranate arils
  • 2 tbsp toasted sesame seeds


Instructions

  1. In a small jar, whisk or shake together olive oil, orange juice, miso paste, rice vinegar, ginger, garlic, honey, and red pepper flakes to create the dressing. Set aside.
  2. Peel the outer skin of the carrots and shave them into long ribbons using a vegetable peeler, rotating as needed until the core is reached. Discard the core and repeat with remaining carrots. Aim for roughly 12-14 ounces of shaved carrots.
  3. In a large bowl, combine the shaved carrots, cilantro, mint, pomegranate arils, and sesame seeds. Pour the dressing over the salad and toss well. Season to taste if needed.
  4. Refrigerate the mixed salad in an airtight container; it will stay fresh for up to 2 days.

Notes

For a varied flavor, try adding nuts like walnuts or almonds for extra crunch.
Consider serving the salad over a bed of greens for additional texture and nutrients.
The salad can be made ahead of time; just add the dressing right before serving.
