- 1 orange 1/4 cup fresh orange juice
- 1 tbsp white miso paste
- 1 tbsp rice vinegar
- 2 tsp fresh ginger grated

- 1/2 tsp red pepper flakes
- 1 1/4 lbs large carrots or rainbow variety
- 1 cup cilantro coarsely chopped
- 1/4 cup fresh mint leaves chopped
- 4 oz pomegranate arils
- 2 tbsp toasted sesame seeds
Instructions
- In a small jar, whisk or shake together olive oil, orange juice, miso paste, rice vinegar, ginger, garlic, honey, and red pepper flakes to create the dressing. Set aside.
- Peel the outer skin of the carrots and shave them into long ribbons using a vegetable peeler, rotating as needed until the core is reached. Discard the core and repeat with remaining carrots. Aim for roughly 12-14 ounces of shaved carrots.
- In a large bowl, combine the shaved carrots, cilantro, mint, pomegranate arils, and sesame seeds. Pour the dressing over the salad and toss well. Season to taste if needed.
- Refrigerate the mixed salad in an airtight container; it will stay fresh for up to 2 days.
Notes
