- 1 1/2 pounds carrots peeled and cut into 1 inch chunks
- Kosher salt to taste I used 3/4 teaspoon
- Freshly ground black pepper
- 2 tablespoons melted salted butter
- 1 tablespoon honey
- 1-2 teaspoons chopped fresh dill
- Flaky sea salt
Instructions
- Preheat your oven to 425° F.
- In a large bowl, add the carrot chunks and toss them with olive oil, salt, and pepper, then spread them into a single layer on a baking sheet.
- Roast the carrots for 15-25 minutes until they are fork-tender and have a nice, caramelized appearance.
- While the carrots are roasting, whisk together the honey and melted butter in a small bowl.
- Once roasted, transfer the carrots to a serving plate and toss them with the honey butter. Finally, top with chopped dill and flaky sea salt. Serve immediately.
