- 1 medium green cabbage trimmed
- 2 tablespoons olive oil more if needed
- Kosher salt and freshly ground black pepper to taste
- 6 tablespoons butter salted or unsalted
- 1 medium-large shallot finely minced
- 2-3 cloves garlic pressed or minced (or ¼–½ teaspoon garlic powder)
- 1 tablespoon dijon mustard or to taste
- 1 lemon cut into wedges
- Garnish optional: chopped parsley, green onions, or chives
Instructions
- Preheat the oven to 450°F (230°C). Prepare a large rimmed baking sheet with parchment paper or a silicone baking mat.
- Cut the cabbage in half, then slice each half into 4 wedges while keeping the core intact for stability.
- Place the cabbage wedges on the baking sheet. Brush with olive oil and season with salt and pepper. Flip and repeat.
- Roast for 10-12 minutes, then flip the wedges. Roast until tender and golden, approximately 8-13 more minutes based on thickness.
- In the meantime, prepare the sauce by melting butter in a small saucepan over medium heat. Sauté the shallots until softened, about 2-3 minutes.
- Add minced garlic and cook for an additional 30-60 seconds until fragrant. Remove from heat and whisk in Dijon mustard until smooth.
- Serve by transferring the cabbage wedges to a platter, drizzling with the sauce, and squeezing fresh lemon juice over them. Garnish as desired.
Notes
For extra flavor, don’t hesitate to get some char on the edges of the cabbage wedges; it adds depth to the dish.
Feel free to adjust the amount of Dijon mustard based on your taste preference.
