- 16 ounces penne pasta
- 1 1/2 teaspoons kosher salt
- 2 tablespoons unsalted butter
- 1 small yellow onion diced
- 2 garlic cloves minced
- 1/3 cup vodka
- 3/4 cup half and half
- 15 ounces tomato sauce
- 1/2 cup parmesan cheese shredded
- basil sliced to garnish
Instructions
- Bring 6 quarts of water to a boil in a large stock pot. Add kosher salt and cook the penne according to package instructions, draining when it has a small bite.
- Melt the butter in a large skillet over medium heat. Add diced onion and minced garlic, sautéing until translucent, about 5 minutes.
- Stir in vodka, scraping up the browned bits from the skillet. Simmer until reduced by half, about 2 minutes.
- Add tomato sauce and half and half, bringing the mixture to a simmer. Cook uncovered over low heat for 8 minutes, stirring occasionally.
- Toss in the cooked penne, serving topped with grated Parmesan cheese and sliced basil.
Notes
For a little extra flavor, consider adding crushed red pepper flakes to the sauce.
You can substitute vodka with white wine for a different taste.
Feel free to add cooked chicken or shrimp for added protein.
