Ingredients
Scale
- 2/3 cup heavy cream (at room temperature)
- 1 cup milk (plus 1 tablespoon, at room temperature)
- 1 large egg (at room temperature)
- ⅓ cup sugar
- 4 cups all-purpose flour
- 1 tablespoon active dry yeast (or instant yeast)
- 1½ teaspoons salt
- 1 cup butter
- ½ cup granulated sugar
- 1 tablespoon ground cinnamon
- ⅓ cup dark brown sugar
- 1 teaspoon vanilla extract
Instructions
- To prepare the dough, mix the heavy cream, milk, egg, sugar, flour, yeast, and salt in a stand mixer until a smooth dough forms. Knead for 15 minutes, adding more flour if necessary.
- Cover the dough with a damp towel and let it rise in a warm place until doubled in size (about 1-2 hours).
- After rising, knead the dough for another 5 minutes to eliminate air bubbles.
- Melt the butter in a pot or microwave. Combine granulated sugar and cinnamon in a separate bowl.
- On a floured surface, divide the dough into quarters, then cut each into 12 smaller chunks, totaling 48 pieces.
- Coat half of the dough pieces with ¼ cup melted butter, then sprinkle with ¼ of the cinnamon sugar mixture. Layer these pieces in the bottom of a bundt pan.
- Repeat with the remaining dough chunks, butter, and cinnamon sugar mixture, layering evenly. Cover and let proof for 45 minutes to 1 hour.
- Preheat oven to 350°F (175°C). Prepare the topping by whisking together the remaining butter, dark brown sugar, and vanilla.
- Drizzle the topping over the proofed dough in the bundt pan, then bake for 35-40 minutes until the internal temperature reaches 195°F (90°C).
- Let the monkey bread rest for 5 minutes before flipping onto a serving plate. Serve warm.
Notes
For best results, ensure all ingredients are at room temperature before starting.
You can customize the cinnamon sugar with additional spices like nutmeg for extra flavor.
If you prefer a sweeter bread, increase the amount of sugar in the dough or topping.
