- 200 ml warm water
- 2 tsp sugar
- 1 tsp active dry yeast
- 2 cups all purpose flour, maida
- 1 tbsp olive oil
- ½ tsp salt
- Sprinkle of all purpose flour, for dusting
- ½ cup pizza sauce
- 1 cup grated mozzarella cheese
Instructions
- Activate the yeast by mixing sugar and yeast into warm water; whisk briefly.
- In a bowl, combine all purpose flour, olive oil, salt, and the yeast mixture. Knead for 6-8 minutes using a stand mixer or 8-10 minutes by hand.
- Check for gluten development with the ‘windowpane’ test by stretching a piece of dough.
- Brush the dough with olive oil, cover, and let it rise until it doubles in size (about 2-3 hours).
- Once risen, punch down the dough and divide it into 8 pieces for mini pizzas.
- Preheat the oven to the highest setting (220-230C), ensuring it heats for at least 15 minutes.
- Roll out each piece into a 3-4 inch circle, dusting both sides with flour.
- Spread pizza sauce on the dough circles, sprinkle with cheese, and add any desired veggies like mushrooms or corn.
- Bake for 8-10 minutes until cheese is melted and crust is crispy. Drizzle with olive oil, add torn basil, and serve hot.
