Description

These Lemon Bars offer a delightful combination of zesty flavor and a buttery crust, making them the perfect treat for any occasion. Simple to prepare with basic ingredients, they’ll quickly become a favorite for gatherings or a sweet afternoon treat.


Ingredients

  • 1 cup unsalted butter, room temperature
  • ½ cups powdered sugar
  • 2 cup flour
  • ½ tsp salt
  • 4 eggs
  • 5-6 tbsp lemon juice
  • 1 ¾ cup sugar
  • ⅓ cup flour
  • ¼ cup powdered sugar, or more, to taste


Instructions

  1. In a medium bowl, combine butter, powdered sugar, flour, and salt using a fork or pastry cutter.
  2. Transfer the mixture to an 8×8 pan lined with parchment paper.
  3. Bake at 375°F for 20 minutes until the crust is firm but not browned.
  4. Meanwhile, use a stand mixer or handheld mixer to blend eggs, lemon juice, sugar, and flour until frothy (about 30 seconds).
  5. Pour the lemon mixture over the crust in the pan.
  6. Bake at 350°F for 15-20 minutes.
  7. Allow to cool before dusting with additional powdered sugar.

Notes

For best flavor, use fresh lemon juice instead of bottled.
Ensure the crust is cooled completely before adding the lemon layer for perfect layering.
