- 16 oz. lasagna noodles
- 15 oz. whole milk ricotta cheese
- 1 cup mozzarella cheese (shredded)
- ¼ cup parmesan cheese (grated)
- 1 large egg
- ¼ tsp salt
- ¼ tsp black pepper (freshly cracked)
- 10 oz. frozen spinach (thawed)
- 23 oz. pasta sauce (jar or homemade)
- 1 cup mozzarella cheese (shredded)
Instructions
- Gather all ingredients and preheat the oven to 400ºF.
- Boil water in a large pot, adding 1 tsp salt. Cook the lasagna noodles until al dente, then drain.
- Drain excess water from spinach and mix it with ricotta, 1 cup mozzarella, Parmesan, egg, salt, and black pepper in a bowl.
- Lay cooked noodles out and spread ¼ cup spinach and cheese mixture on each, rolling them up carefully.
- Place the rolled noodles in a casserole dish and pour pasta sauce over them. Add the remaining 1 cup mozzarella on top.
- Cover with foil and bake for 30 minutes, then serve hot.
Notes
You can use homemade or store-bought pasta sauce depending on your preference.
These roll ups can be frozen before baking and cooked later for a quick meal.
