  • 16 oz. lasagna noodles
  • 15 oz. whole milk ricotta cheese
  • 1 cup mozzarella cheese (shredded)
  • ¼ cup parmesan cheese (grated)
  • 1 large egg
  • ¼ tsp salt
  • ¼ tsp black pepper (freshly cracked)
  • 10 oz. frozen spinach (thawed)
  • 23 oz. pasta sauce (jar or homemade)
  • 1 cup mozzarella cheese (shredded)


Instructions

  1. Gather all ingredients and preheat the oven to 400ºF.
  2. Boil water in a large pot, adding 1 tsp salt. Cook the lasagna noodles until al dente, then drain.
  3. Drain excess water from spinach and mix it with ricotta, 1 cup mozzarella, Parmesan, egg, salt, and black pepper in a bowl.
  4. Lay cooked noodles out and spread ¼ cup spinach and cheese mixture on each, rolling them up carefully.
  5. Place the rolled noodles in a casserole dish and pour pasta sauce over them. Add the remaining 1 cup mozzarella on top.
  6. Cover with foil and bake for 30 minutes, then serve hot.

Notes

You can use homemade or store-bought pasta sauce depending on your preference.
These roll ups can be frozen before baking and cooked later for a quick meal.
Add your favorite herbs or extra cheese to the filling for more flavor.
