This Julienne Kale Salad combines fresh kale, romaine lettuce, and savory toppings for a delightful, quick meal. Perfect for lunch or dinner, it’s an easy, healthy option that bursts with flavor.

Ingredients

Scale
  • 3 stalks kale, about 3 handfuls of loose kale
  • 2 romaine lettuce hearts
  • 4 oz swiss cheese block
  • 2 tomatoes
  • 1 cup castelvetrano olives
  • ½ lb precooked sliced ham
  • 1 cup parmesan flakes
  • Mediterranean Dressing
  • ½ cup extra virgin olive oil
  • ¼ cup white wine vinegar
  • 2 tbsp worcestershire
  • 1 tbsp olive juice, from canned olives
  • 1 lemon, juiced
  • 1 tbsp dried oregano
  • 1 tsp kosher salt
  • 1 tsp fresh cracked black pepper
  • 3 garlic cloves, minced

Instructions

  1. Prepare the dressing by finely mincing the garlic.
  2. Combine all dressing ingredients in a mason jar and shake well to mix.
  3. Set the dressing aside until needed.
  4. For the salad, slice the kale and romaine lettuce into ½" strips.
  5. Julienne the swiss cheese, ham, and tomatoes into small strips.
  6. In a large bowl, combine the kale, lettuce, cheese, ham, tomatoes, olives, and ¾ of the parmesan cheese. Toss to mix well.
  7. Drizzle half of the dressing over the salad and toss to coat evenly.
  8. Reserve the remaining dressing for serving. Top the salad with the remaining parmesan cheese and serve with extra dressing on the side. Enjoy!

Notes

Make the dressing the night before to enhance the flavors.
Feel free to customize the salad with your favorite vegetables.
This salad can be stored in the refrigerator for a day, but the dressing should be added just before serving.
