Description

These Italian Easter Cookies are known for their delightful flavor and simple preparation. Made with tender dough and a sweet glaze, they’re perfect for celebrations and gatherings.


Ingredients

  • 3 cups all-purpose flour
  • 2 tsp baking powder
  • 3/4 cup granulated sugar
  • 1/2 cup butter – softened
  • 1 tsp vanilla extract
  • 2 tsp almond extract
  • 3 eggs
  • 1 cup confectioner's sugar
  • 3 tbsp heavy cream
  • 1 tsp almond extract
  • sprinkles


Instructions

  1. Preheat your oven to 350 degrees Fahrenheit and line 2 baking sheets with parchment paper.
  2. In a large bowl, combine the butter and granulated sugar and beat until smooth.
  3. Add the eggs, vanilla extract, and almond extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour and baking powder.
  5. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms without over mixing.
  6. Using a tablespoon cookie scoop or spoon, scoop a heaping tablespoon of dough, roll it into a ball, and place it on the prepared cookie sheets.
  7. Bake in the preheated oven for 12-15 minutes or until a toothpick comes out clean. Allow the cookies to cool completely before glazing.
  8. To prepare the glaze, whisk together the confectioner's sugar, heavy cream, and almond extract until smooth.
  9. Once the cookies have cooled, dip the tops in the glaze and sprinkle with decorative sprinkles before serving.

Notes

Feel free to adjust the amount of almond extract for a more or less pronounced flavor.
These cookies can be stored in an airtight container for up to one week.
Experiment with different sprinkles for a fun, festive touch.
