- 2 cups (240 g) all-purpose flour, (spoon + level)
- 1 3/4 cups (210 + 30 g) wholemeal flour, plus up to 1/4 cup for dusting, (spoon + level)
- 1 1/2 teaspoon (7 g) baking soda
- 1 1/2 teaspoons (4 g) kosher salt
- 2 cups (454 g) buttermilk
Instructions
- Preheat your oven to 400º F and prepare a baking sheet by lining it with parchment paper or lightly dusting with flour.
- In a large bowl, whisk together the all-purpose flour, wholemeal flour, baking soda, and kosher salt.
- Pour in the buttermilk and stir until just combined; avoid overmixing.
- Transfer the dough to a lightly floured surface and knead gently until smooth, no more than seven times to retain the gas bubbles.
- Shape the dough into a round loaf and place it on the baking sheet. Cut a cross into the top of the dough.
- Bake for about 40 minutes. Check for doneness by tapping the bottom of the loaf; it should sound hollow.
- Allow the bread to cool on a wire rack. For a softer crust, wrap it in a dry tea towel while cooling.
Notes
For a more rustic look, leave the scoring on top of the loaf deeper.
Store leftover bread in an airtight container to keep it fresh longer.
Serve warm with butter or as a side to soups.
