- 4 russet potatoes, 2 to 2 1/2 pounds, peeled and cut into large chunks
- Celtic sea salt and pepper, to taste
- 5 to 6 tablespoons unsalted butter, plus more for serving
- 3 lightly packed cups chopped kale, cabbage, chard, or other leafy green
- 3 green onions, minced (about 1/2 cup)
- 1 cup milk or cream
Instructions
- Boil the peeled and chopped potatoes in a medium pot with water covering them.
- Add a pinch of salt to the water and bring to a boil.
- Once the potatoes are soft and easily pierced with a fork, drain them in a colander and set aside while melting butter.
- Melt butter in a pan until light and foamy, then stir in the greens until wilted and cooked down, stirring to prevent burning.
- Add the minced green onions and cook for an additional minute.
- Slowly pour in the milk while stirring, and mix well. Reduce heat to medium.
- Incorporate the drained potatoes, mashing them with the greens until soft, but don't overwork them.
- Season with sea salt and pepper to taste, and optionally add garlic powder for a traditional twist.
- Serve with a pat of butter in the center and a sprinkle of fresh pepper on top.
Notes
For quicker preparation, frozen peeled potatoes can be used; simply microwave or boil until soft.
Adjust the amount of greens based on personal preference, mixing different types for added flavor.
