- 1 tablespoon olive oil
- 1 small onion diced
- 1 small green bell pepper diced
- 1 small red bell pepper diced
- 3 cloves garlic minced or pressed
- 2 pounds lean ground beef
- ⅓ cup bbq sauce
- 1 cup beef broth
- 1 teaspoon beef better than bouillon
- 1 tablespoon worcestershire sauce
- 1 teaspoon kosher salt
- ½ teaspoon ground pepper
- 8 ounces monterey jack cheese shredded
- 6 brioche buns or gluten-free buns
Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced onion and bell peppers, and sauté until soft, about 5-7 minutes.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Push vegetables to the side and cook the ground beef until no longer pink, breaking it apart as it cooks.
- Combine BBQ sauce, beef broth, bouillon, Worcestershire sauce, salt, and pepper into the pan, stir well, and let simmer for 10 minutes to thicken flavors.
- Stir in shredded cheese before serving.
- Serve the beef mixture on buns, and optionally toast the buns with butter.
Notes
Use grass-fed beef for a richer flavor.
Feel free to customize with your favorite cheese or add jalapeños for a spicy kick.
For a low-carb option, serve without buns.
