Description

Ground Beef Enchiladas burst with irresistible flavors and are a breeze to prepare. Made with ground beef, cheddar cheese, and easy-to-handle tortillas, this dish is ideal for a quick dinner that brings comfort to the table.


Ingredients

  • 1 ½ pounds lean ground beef
  • ½ teaspoon kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 onion diced
  • 1 bell pepper diced
  • 3 tablespoons taco seasoning
  • 8 flour tortillas soft taco size
  • 3 cups sharp cheddar cheese shredded, 1 cup reserved for the top of enchiladas
  • 20 ounces red enchilada sauce (2 cans) mild
  • green onions or cilantro optional for garnish


Instructions

  1. Preheat the oven to 375°.
  2. Cook the ground beef in a large skillet over medium-high heat, seasoning with salt and pepper, until browned. Drain excess grease if needed.
  3. Add olive oil to the skillet, then stir in diced onions and bell peppers. Cook until vegetables are softened.
  4. Stir in taco seasoning and add a little water if necessary. Remove from heat.
  5. Lay the flour tortillas flat and spoon the beef mixture onto each tortilla. Top with shredded cheddar cheese and roll tightly.
  6. Spread a layer of enchilada sauce in a baking dish. Place the enchiladas seam-side down, then pour the remaining sauce over them.
  7. Sprinkle the reserved cheddar cheese on top and bake for 25 to 30 minutes until bubbly and golden.
  8. Remove from the oven and garnish with chopped cilantro or green onions before serving.

Notes

Feel free to add additional toppings such as sour cream or avocado for extra flavor.
To make this recipe spicier, opt for hot taco seasoning or add jalapeños to the filling.
