  • 3 tbsp granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp sea salt
  • 1¼ cup milk, of your choice
  • 2 eggs
  • 1 tsp vanilla extract
  • powdered sugar, for dusting
  • avocado oil, or any neutral-flavored oil, for frying


Instructions

  1. In a large bowl, combine gluten-free flour, sugar, baking powder, and sea salt.
  2. In another bowl, whisk the milk, eggs, and vanilla extract together until well blended.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined; the batter should be slightly thinner than pancake batter.
  4. Transfer the batter into a squeeze bottle or piping bag, cutting a large opening at the bottom.
  5. Set up a wire rack with paper towels underneath. Heat 1 inch of avocado oil in a skillet over medium-high heat until it reaches 375°F.
  6. Squeeze the batter into the hot oil, forming 5-6 strips without overcrowding. Fry for about 3 minutes, flipping halfway until they are golden brown and crisp. Transfer to the wire rack and repeat with any remaining batter.
  7. Finally, dust the fried pieces with powdered sugar before serving.
