Description

Ingredients

  • 6 hard-boiled eggs, peeled and chopped
  • ¼ cup finely diced red onion
  • ¼ cup mayonnaise*
  • 2 tablespoons dijon mustard
  • 1 tablespoon chopped fresh dill*
  • 1 tablespoon chopped fresh chives*
  • 1 teaspoon fresh lemon juice
  • ¼ teaspoon fine salt
  • pinch of black pepper
  • optional for garnish: paprika or fresh herbs


Instructions

  1. In a medium bowl, combine the chopped eggs, red onion, mayonnaise, mustard, dill, chives, lemon juice, salt, and pepper; gently mix to incorporate.
  2. If desired, sprinkle paprika over top before serving.
