Description

Egg Roll in a Bowl combines flavorful ground pork, fresh veggies, and a savory sauce for a quick and satisfying meal. Perfect for busy weeknights!


Ingredients

Scale
  • 3 tablespoons soy sauce
  • 2 tablespoons water
  • 1 tablespoon toasted sesame oil
  • 2 teaspoons light brown sugar
  • 1 teaspoon rice wine vinegar
  • 1 teaspoon sriracha
  • 1 yellow onion
  • 1 pound ground pork
  • salt & pepper
  • ½ tablespoon oil
  • ½ tablespoon oil
  • 16 oz tri-color coleslaw
  • 3 cloves garlic
  • 1 inch piece fresh ginger


Instructions

  1. Prepare the sauce by whisking together all sauce ingredients in a small measuring cup and set it aside.
  2. Heat a large skillet over medium-high heat. Add the onion and ground pork. Season lightly with salt and pepper, then stir-fry until the meat is no longer pink. Use paper towels to drain excess fat.
  3. Return the skillet to medium-high heat, add ½ tablespoon oil, and continue to stir-fry until the pork is browned.
  4. Deglaze the skillet with 2-3 tablespoons of water, scraping up any browned bits from the bottom before removing the pork to a bowl.
  5. In the same skillet, add the remaining oil and the coleslaw mix, stir-frying until the vegetables start to wilt, about 10 minutes.
  6. Reduce the heat to medium and stir in the garlic and optional ginger, cooking until fragrant, about 2-3 minutes.
  7. Add the pork mixture and the prepared sauce to the skillet, increasing the heat to medium-high and stir-fry until the sauce coats everything evenly. Serve immediately.

Notes

The sauce can be adjusted for spice; add more sriracha if you prefer a kick.
Add more vegetables like bell peppers or snap peas for extra flavor and texture.
