  • 1 lb chicken breast (skinless & boneless)
  • ⅓ cup all-purpose flour
  • ¾ teaspoon sea salt (divided)
  • ½ teaspoon white pepper (divided)
  • ¾ teaspoon crushed red pepper flakes (divided)
  • ¼ teaspoon cayenne pepper
  • 3 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 large shallot (diced)
  • 1 cup mushrooms (sliced)
  • 2 cloves garlic (minced)
  • ½ cup white wine
  • ½ cup chicken broth (or stock)
  • 2 tablespoon italian parsley (chopped)
  • crumbled feta cheese

Instructions

  1. Slice the chicken breasts diagonally and place each piece in a ziplock bag. Pound with a mallet to even thickness (about ¼ inch). Season with ¼ teaspoon sea salt and white pepper on both sides.
  2. Combine flour with ½ teaspoon sea salt, and a mix of ¼ teaspoon white pepper, crushed red pepper, and cayenne. Coat each chicken piece in the flour and shake off excess.
  3. In a large skillet over medium-high heat, heat the olive oil until shimmering. Cook the coated chicken pieces for 1½-2 minutes per side until lightly golden. Remove from the pan and set aside.
  4. Add butter to the pan and sauté the shallots, mushrooms, and garlic for a few minutes until softened. Pour in the wine and chicken broth to deglaze the skillet, then stir in ¼ teaspoon crushed red pepper.
  5. Return the chicken to the pan, cooking uncovered over low to medium heat for 3 minutes per side. Taste and adjust the seasoning, then garnish with fresh parsley.

Notes

For extra flavor, consider marinating the chicken in wine and spices for an hour before cooking.
Feel free to substitute the chicken broth with vegetable broth for a lighter option.
