Description

Ingredients

  • 1 1/2 cups white whole wheat flour
  • 1/2 cup dutch process cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2/3 cup chocolate chips, plus more for topping
  • 1 cup ripe bananas, mashed (about 3 small/medium bananas with plenty of brown spots)
  • 1/2 cup plain greek yogurt
  • 2/3 cup maple syrup
  • 1/4 cup avocado oil
  • 2 eggs
  • 1 teaspoon pure vanilla extract


Instructions

  1. Preheat the oven to 350°F and line a loaf pan with parchment paper or lightly spray with oil.
  2. In a large bowl, combine all wet ingredients and whisk until fully mixed.
  3. In a separate medium bowl, combine all dry ingredients, except the chocolate chips, and whisk until fully mixed.
  4. Add the dry mixture into the wet mixture and stir with a wooden spoon until combined. Gently fold in the chocolate chips.
  5. Transfer the batter to the prepared loaf pan, topping generously with extra chocolate chips.
  6. Bake for 50 to 55 minutes or until a toothpick comes out clean.

Notes

For extra moisture, ensure your bananas are very ripe with plenty of brown spots.
You can substitute the greek yogurt with applesauce for a dairy-free version.
Storing the banana bread in an airtight container will keep it fresh for up to a week.
