  • 11 ounce canned sweet corn drained
  • 15 ounce canned black beans drained and rinsed
  • 15 ounce canned blackeyed peas drained and rinsed
  • 1 cup cilantro chopped
  • ½ cup extra virgin olive oil
  • ⅓ cup sugar
  • ⅓ cup red or white wine vinegar
  • 1 teaspoon salt
  • 1 teaspoon chili powder


Instructions

  1. Prep the vegetables and rinse the beans thoroughly.
  2. In a large mixing bowl, whisk together the olive oil, sugar, vinegar, chili powder, and salt until well blended.
  3. Incorporate the diced tomatoes, peppers, diced onion, corn, and beans into the mixture. Gently combine them.
