Description

Cottage Cheese Egg Bites are a delightful combination of flavors and textures. This easy recipe showcases rich cottage cheese and cheddar, making it ideal for quick meals and healthy snacks.


Ingredients

  • 8 large eggs
  • 1 cup cottage cheese full fat
  • 1 1/2 cups cheddar cheese shredded, 6 ounces (170 grams)
  • 1/2 teaspoon kosher salt (if using table salt, use 1/4 teaspoon)
  • 1/8 teaspoon black pepper
  • 1 cup mix ins see note


Instructions

  1. Preheat the oven to 325 degrees Fahrenheit and prepare a nonstick muffin pan with cooking spray.
  2. Blend eggs, cottage cheese, shredded cheddar, salt, and pepper in a blender until smooth, being careful not to overblend. Stir in desired mix-ins.
  3. Pour the mixture into the muffin cups until they are 3/4 full, ensuring mix-ins are evenly distributed.
  4. Bake for 25 to 30 minutes or until the egg bites are set.

Notes

Silicone muffin pans are recommended for easy removal of the egg bites.
