- 24 oz cottage cheese
- 1 red pepper diced
- 1 yellow pepper diced
- 5 oz spinach
- 1/2 cup Feta cheese
- 1 cup cheddar shredded
- 3/4 tbsp salt
- 1/4 tsp black pepper
- 1/4 tsp Red pepper flakes
- 1/2 cup fresh basil chopped
Instructions
- Preheat your oven to 350°F.
- Lightly grease a baking dish.
- Sauté the onion with garlic until softened.
- In a large bowl, whisk together the eggs, salt, and red pepper flakes.
- Fold in the cottage cheese, shredded cheddar, and feta cheese.
- Transfer the sautéed onion into the baking dish and spread it evenly.
- Add the diced red pepper and spinach on top, then sprinkle with chopped basil.
- Pour the egg mixture into the prepared baking dish, smoothing the top.
- Bake for 40-50 minutes until the center is set and the top is lightly golden.
