Description

This Cottage Cheese Alfredo Sauce combines irresistible flavors with simple ingredients, making it a perfect choice for quick dinners or healthy meals. Packed with protein and easy to prepare, it’s a creamy sauce that elevates any pasta dish.


Ingredients

  • 1 cup cottage cheese
  • 1 cup low fat milk or whole milk
  • 1 teaspoon olive oil
  • 1 garlic clove minced
  • ½ cup parmesan cheese grated
  • ½ teaspoon salt
  • 1 teaspoon corn starch or tapioca flour
  • 2 tablespoon nutritional yeast optional
  • fresh parsley, grated parmesan, freshly grated black pepper for serving


Instructions

  1. Blend cottage cheese, milk, and grated parmesan cheese in a blender until mostly smooth.
  2. In a large skillet, heat olive oil and sauté minced garlic over medium low heat for 1-2 minutes.
  3. Pour in the blended cottage cheese mixture, simmer gently and stir to melt the cheeses. Reduce heat to low.
  4. Mix in salt, cornstarch, and nutritional yeast (if used) and whisk until the sauce thickens.
  5. Add cooked pasta to the sauce, stir to combine. Adjust thickness with more milk or pasta water if necessary.
  6. Serve with extra parmesan, black pepper, and parsley for garnish.

Notes

This sauce can be adjusted for consistency by adding more milk or pasta cooking water as needed.
For a richer flavor, consider using whole milk.
Nutritional yeast adds a cheesy flavor, but it’s optional.
