- 1 cup cottage cheese
- 1 cup low fat milk or whole milk
- 1 teaspoon olive oil
- 1 garlic clove minced
- ½ cup parmesan cheese grated
- ½ teaspoon salt
- 1 teaspoon corn starch or tapioca flour
- 2 tablespoon nutritional yeast optional
- fresh parsley, grated parmesan, freshly grated black pepper for serving
Instructions
- Blend cottage cheese, milk, and grated parmesan cheese in a blender until mostly smooth.
- In a large skillet, heat olive oil and sauté minced garlic over medium low heat for 1-2 minutes.
- Pour in the blended cottage cheese mixture, simmer gently and stir to melt the cheeses. Reduce heat to low.
- Mix in salt, cornstarch, and nutritional yeast (if used) and whisk until the sauce thickens.
- Add cooked pasta to the sauce, stir to combine. Adjust thickness with more milk or pasta water if necessary.
- Serve with extra parmesan, black pepper, and parsley for garnish.
Notes
This sauce can be adjusted for consistency by adding more milk or pasta cooking water as needed.
For a richer flavor, consider using whole milk.
