Description

This Cilantro Lime Rice boasts an irresistible flavor profile thanks to the bright notes of lime and fresh cilantro. Perfect as a quick side dish for any meal, it brings a healthy and zesty touch to your table with minimal prep and cooking time.


Ingredients

  • 2 teaspoons avocado oil
  • 1 cup long grain white rice (such as jasmine or basmati)
  • 1 ½ cups water
  • ¼ teaspoon fine salt
  • zest and juice of 1 medium lime (2 tablespoons juice + 1 teaspoon zest)
  • ½ cup loose-packed finely chopped fresh cilantro


Instructions

  1. Heat a large saucepan over medium-high heat and add the avocado oil and rice. Toast the rice for 1 minute while stirring constantly.
  2. Pour in the water and add the salt; stir to combine.
  3. Increase the heat to high until it reaches a boil, stirring occasionally to prevent sticking. Cover and reduce heat to low once boiling.
  4. Let it simmer covered over low heat until water is absorbed and rice is tender, about 13 to 15 minutes.
  5. Remove from heat and keep covered for 10 minutes to finish steaming.
  6. Fluff the rice with a fork, then stir in the lime zest, lime juice, and chopped cilantro. Serve warm.

Notes

For more flavor, consider adding garlic or onion while toasting the rice.
Store leftovers in an airtight container for up to 4 days, or freeze for up to 3 months.
