- 2 teaspoons avocado oil
- 1 cup long grain white rice (such as jasmine or basmati)
- 1 ½ cups water
- ¼ teaspoon fine salt
- zest and juice of 1 medium lime (2 tablespoons juice + 1 teaspoon zest)
- ½ cup loose-packed finely chopped fresh cilantro
Instructions
- Heat a large saucepan over medium-high heat and add the avocado oil and rice. Toast the rice for 1 minute while stirring constantly.
- Pour in the water and add the salt; stir to combine.
- Increase the heat to high until it reaches a boil, stirring occasionally to prevent sticking. Cover and reduce heat to low once boiling.
- Let it simmer covered over low heat until water is absorbed and rice is tender, about 13 to 15 minutes.
- Remove from heat and keep covered for 10 minutes to finish steaming.
- Fluff the rice with a fork, then stir in the lime zest, lime juice, and chopped cilantro. Serve warm.
Notes
For more flavor, consider adding garlic or onion while toasting the rice.
