Ingredients

  • 1 cup granulated sugar
  • 1 cup plain whole milk greek yogurt, at room temperature
  • 1/2 cup avocado oil, can use vegetable or canola oil
  • 3 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup all-purpose flour, spooned and leveled
  • 1/2 cup dutch-process cocoa powder*
  • 2 teaspoons baking powder
  • 1 teaspoon instant espresso powder
  • 1/2 teaspoon kosher salt
  • 2 cups confectioners’ sugar
  • 1/3 cup cocoa powder, dutch-process or regular
  • 1/3 cup unsalted butter, softened
  • 1/3 cup plain whole milk greek yogurt
  • 1 teaspoon vanilla extract
  • pinch of salt
  • for serving: fresh berries, optional


Instructions

  1. Preheat the oven to 350°F. Grease a 9-inch round cake pan with cooking spray, line the bottom with parchment, and spray again.
  2. In a large bowl, mix the granulated sugar, Greek yogurt, oil, eggs, and vanilla until combined.
  3. Add the flour, baking powder, espresso powder, and salt; stir gently until just combined.
  4. Pour the batter into the prepared pan and bake for 30 to 35 minutes, or until a toothpick inserted comes out clean.
  5. Allow the cake to cool in the pan for 15 minutes, then invert onto a wire rack to cool completely.
  6. While the cake cools, prepare the frosting. Beat softened butter until creamy, then add Greek yogurt, vanilla, and salt; mix until smooth.
  7. In another bowl, whisk together confectioners’ sugar and cocoa powder. Gradually add this to the butter mixture, mixing until smooth and spreadable.
  8. Spread the frosting over the cooled cake and serve with fresh berries if desired.
