These Chocolate Peanut Butter No-Bake Cookies are a delightful blend of rich chocolate and creamy peanut butter. - 6 tablespoons unsalted butter
- 1 and 1/2 cups granulated sugar
- 1/2 cup milk
- 1/4 cup unsweetened natural or dutch-process cocoa powder
- 2/3 cup creamy peanut butter
- 1 tablespoon pure vanilla extract
- 3 cups old-fashioned whole rolled oats or quick oats
- 1/8 teaspoon salt
Instructions
- In a medium saucepan over medium heat, combine the butter, sugar, milk, and cocoa powder. Whisk constantly until the butter melts.
- Allow the mixture to come to a boil, whisking occasionally. Once boiling, let it boil for 1 minute without stirring. The mixture should reach a temperature of 225°F (107°C).
- Remove from heat and stir in the peanut butter and vanilla extract until fully combined. Then, add the oats and salt.
- Let the mixture sit for 5 minutes to allow the oats to absorb moisture.
- While it rests, line two baking sheets with parchment paper or silicone mats and ensure there’s enough space in the refrigerator.
- Using a 1-tablespoon cookie scoop or tablespoon, drop spoonfuls of dough onto the lined sheets. Optionally, flatten the cookies slightly with the back of a spoon.
- Refrigerate the cookies for 30-60 minutes until set. Once set, remove from the refrigerator and enjoy!
- Store leftover cookies in an airtight container in the refrigerator for up to 1 week.
Notes
For an extra chocolatey flavor, consider adding chocolate chips to the mixture.
Make sure to allow the cookies to cool completely in the refrigerator for the best texture.
